Pad Thai noodles were introduced to Thai during second world war by our PM, during the severe flooding thus caused less soil to grow agricuturlal produces, however the noodles can be found as it is made from rice while beansprouts need no soil for growing it. Other ingredients were added up later for better taste.

Plam Sugar 25%, Chili 13%, Garlic 20%, Shallot 5%, Salt 2%, Tamarind Juice 12%, Pickle Turnip 10%, Distilled Vinegar 4%, Roasted Peanuts 6%, Dried Shrimps 3%

Small Noodles/Chanburi noodles(Soaked) | 900 grams |
Cooked shrimps 90/120 per lb | 600 grams |
White bean curd, bartonette (If available) | 400 grams |
Bean sprouts root cut | 400 grams |
Vegetable Oil | 160 grams |
Chinese Chives cut into 3 cm. | 140 grams |
8 Fresh eggs | |
Dried Shrimps | 100 grams |
Unsalted, toasted peanuts, chopped | 120 grams |
Lime juice | 80 grams |
Method
- Soaked noodle in warm water (30 minute) until soft and drain the water.
- Heat vegetable oil (2 tbsp) over moderated heat, add the egg and fried to scramble until done then put aside.
- Heat vegetable oil (4 tbsp) over moderated heat, add noodles and stir-fry to evenly cooked.
- Add Pad Thai sauce (Pre-heat), stir-fry to mix quickly with noodles.
- Add dry shrimps, cooked shrimps, white bean curd, bean sprouts, chives, eggs and Peanuts.
- Continue cooking thoroughly for a few minutes to warm up, but not to overcook.
- Lime juice can be added last before serving. If require.
